Satisfy your S’mores craving anytime with a S’mores Waffle. Start with a graham cracker waffle, stuffed with marshmallows and melted chocolate.

A few weeks back I made the mistake of picking up marshmallows, graham crackers and chocolate while I was at the grocery store with the kids. I didn’t have any immediate plans with them but I figured I might as well stock up for all of those summer campfires. While checking out the kids spotted all of the well-known ingredients and expected a campfire and s’mores for dessert that night, boy were they upset when they found out they were wrong.
Most years we’ve had our kickoff BBQ and have toasted marshmallows by the campfire by now, but spring has not sprung here in northern New England. The last of our snow finally melted last week, but the cold weather has re-visited, along with rain every single day this week. After having to cancel our plans for a BBQ last weekend due to rain I decided to surprise the kids with a S’mores Waffle for breakfast.
There’s no campfire required for these ooey gooey s’more waffles. The graham cracker waffle base is topped with the classic s’more ingredients; melted marshmallows and milk chocolate!
S’mores Waffle
Ingredients:
- 2 cups flour
- 3 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup sugar
- 2 eggs, (separate egg white & yolks)
- 1/2 cup melted butter
- 2 cups milk
- 2 tsp vanilla
- 1/2 cup crushed graham crackers
- 1/3 cup mini chocolate chips
- 2 cups mini marshmallows
- (optional) toppings: whipped cream, crushed graham cracker, chocolate chips, chocolate syrup
Directions:
- Beat egg whites until stiff peaks form. (Tip: save time by using an electric mixer)
- Combine dry ingredients in a bowl, stir together
- In a separate bowl mix egg yolks, milk, and butter.
- Add wet and dry ingredients together, stir until combined
- Fold the egg whites in the batter
- Allow the batter rest for at least 5 minutes.
- Bake in preheated waffle iron according to manufacturers directions.
- Once golden brown, top with mini marshmallows and chocolate chips. Fold over half of the waffle to make a sandwich and close. Allow to bake just long enough to melt the marshmallows and chocolate chips, about 30-60 seconds).
