Knowing that at least three to four days are spent out of the house during dinner time, I try to either have a meal in the crock-pot or a quick option for when we get home. It can sometime be a challenge when it comes to preparing healthy and quick meals but I know I can always count on pasta with red sauce for one of those busy nights. Pasta is almost always on the menu for hockey night as it’s quick and easy to make after practice. This week we explored a new type of pasta, Pasta Lensi.

Pasta Lensi is an authentic Italian pasta brand made in the Lombardy region of Italy. They recently introduced a new line of single-ingredient, gluten free, vegan legume based pastas in flavors that include chickpea, black bean and red lentil. I was a bit skeptical how the kids would take to these new flavors of pasta but was was looking forward to adding a healthy twist with the extra protein and fiber to their dish.

Pasta Lensi Chickpea Casarecce:
Made with flour ground from chickpeas and reflects the flavor and sandy color of its single ingredient. It pairs well with fresh, chunky sauces, and provides 22 grams of protein and 12 grams of fiber per 3.5 oz serving. It is also gluten free, vegan, low fat, low in sodium, cholesterol free, and a good source of potassium and iron. Chickpea Casarecce can be used in casseroles and baked dishes and is excellent in this “Hummus” Pasta Salad with Tahini dressing.
Pasta Lensi Red Lentil Fusilli:
Made with flour from ground red lentils and has a rich red hue that brings brightness to any dish. It catches sauce between its curls and provides 26 grams of protein and 5 grams of fiber per 3.5 oz serving. It is also gluten free, vegan, low fat, low in sodium, cholesterol free, and a good source of potassium and iron. Red Lentil Fusilli is delicious when paired with vegetable-based sauces, or in this Tomato Yogurt Cream Sauce with Coriander.
Pasta Lensi Black Bean Sedani:
Made with flour ground from black beans and has a dark, rich color reflective of its single ingredient. Lensi black bean pasta makes an excellent complement to Latin American flavors, and provides 21 grams of protein and 17 grams of fiber per 3.5 oz serving. Lensi black bean pasta is gluten free, vegan, low fat, low in sodium, cholesterol free, and a good source of potassium and iron per serving. Black Bean Sedani can be paired with both light cream or cheese sauces and heartier, meat-based sauces, and is excellent in this Black Bean Migas recipe.
With Halloween just a few days away I used the Lensi black bean pasta to add a healthy and spooky twist to dinner time. Trevor thought the black pasta was neat and was curious how I changed the colors. I topped it with our favorite red sauce and “eyeballs.” To make the eyeballs I cut sliced cheese using a mini circle cookie cutter and put a piece of Black Bean Sedani pasta in the center.
