These No Bake Peanut Butter Energy Bites are packed with old fashioned oats, peanut butter and flax seeds. Packed with protein and fiber this easy no-bake snack will help you feel fuller for longer.
Food disappears in our house quicker than I ever expected but I guess that’s what happens when you have two active boys who are always on the go. My husband used to always say, if you think they eat a lot now, wait until they get to high school. He remembers his mom always complaining about how she would go shopping one day and within a few days the pantry, fridge, and freezer would be empty.
With summer break quickly approaching I am always looking for ways to make healthier choices when it comes to food- even with a busy schedule. I have been trying to find new foods that will leave us feeling fuller for longer, instead of just making us more hungry that are convenient for our on-the-go lifestyle. Foods that will leave us feeling satisfied and that can help boost our energy. The kids always seem to have an endless amount of energy, but I on the other hand sometimes need a jumpstart.
These No Bake Peanut Butter Energy Bites are easy to make, can be stored and the freezer, and are loaded with protein and fiber to help you feel fuller for longer. This protein packed snack is for not just adults but the kids too, there are so many variations and you can easily switch up the ingredients, either M&Ms, chocolate chips, shredded coconut, sunflower seeds, cranberries, or almonds. I prefer the dark chocolate chips with shredded coconut while the kids are crazy for the M&M and sunflower combo.
No Bake Peanut Butter Energy Bites:
What you’ll need:
- 1 1/2 cup old-fashioned oats
- 2/3 cup peanut butter
- 1/4 cup ground flax seeds
- 1/4 cup mini M&Ms (or semisweet chocolate chips)
- 1/4 cup sunflower seeds
- 1/3 cup honey
- 1 tsp vanilla extract.
Add all of the ingredients together in a medium bowl and mix until well combined. The mixture will be sticky from the peanut butter and honey so you’ll need to cover it and place it in the refrigerator for 20-30 minutes to harden.
Once chilled, scoop the mixture into your hands and roll into a ball. You can use a tablespoon or a cookie scoop to make it easier. (I LOVE my cookie scoop and use it for so many recipes, if you don’t have one, get one)
Store the energy bites in an airtight container and keep in the refrigerated for up to 1 week, or you can store them in the freezer for longer. Toss a couple in your lunch bag for an afternoon snack at work, at the park, or while hiking.
Don’t have mini M&M’s on hand? Swap them out for dark chocolate chips, white chocolate chips, almonds, shredded coconut, cranberries ect. If you change up the ingredients and the energy bites are not sticking together once you remove them from the fridge, try adding a little more peanut butter and re-rolling.
*If you’re allergic to peanut butter, use sunflower butter or almond butter. My kids cannot bring peanut butter to their school but can bring almond or sunflower butter.
