It’s hard to believe that they school year is already coming to a end, it feels as though I was just sending Jonathan off to his first day of school. But I’m glad that winter is over and school is coming to a close. The warm weather has finally arrived! I’m ready for days filled with outdoor fun, picnics, and barbecues with friends. Having recently moved to a new house with a large yard, the kids and I are eager to have our new friends over for cookouts and summer fun.
Grilling season is already in full swing with our fridge stocked with hot dogs, steaks, hamburgers, and fruit. Although we have our favorite dishes, I’m excited to compile a list of new appetizers and desserts to make during summer break. You can’t go wrong with this easy fruit pizza as an afternoon snack for the kids.
We made the Fruit Pizza that we found in the Kraft “Kick-Off Your Summer” cookbook this past week and it was a huge hit with not only the kids but the adults as well. This fruit pizza recipe is easy to customize by using a mix of strawberries, kiwi, mandarin oranges, raspberries, blueberries, blackberries. If you’re trying to stay within a budget just grab whatever fresh fruit is on sale at your local grocery store.
Fruit Pizza:
This fruit pizza is so easy to make! From start to finish it takes about 30 minutes, then refrigerate for about two hours before serving.
Arrange the fruit on this sugar cookie fruit pizza any way you’d like. Spread one fruit around in a single layer in a circular motion, or create any design you’d like.
What you’ll need to make Fruit Pizza:
- 1 pkg. (16.5 oz.) refrigerated sugar cookie dough
- 1 pkg. (8 oz.) cream cheese, softened
- 1/4 cup sugar
- 1/2 tsp. vanilla
- 4 cups assorted fresh fruit
- 1/4 cup apricot preserves, pressed through a small strainer to remove lumps
- 1 Tbsp. water
Directions to make the Sugar Cookie Fruit Pizza:
Pre-heat oven to 375°F.
Fruit pizza crust: arrange the sugar cookie dough in single layer on an ungreased pizza pan. Press to cover bottom of pan. Bake 14 min or until it starts to lightly brown. Allow the sugar cookie to cool completely.
This fruit pizza with cream cheese was a big hit, and a fun way to serve fruit. For the 4th of July, I plan to replicate the fruit pizza recipe but make the sugar cookie crust in a rectangle instead of a circle. I’ll top it with a red, white, and blue theme by using strawberries and blueberries.

Ingredients
- 1 pkg 16.5 oz. refrigerated sugar cookie dough
- 1 8 oz cream cheese, softened
- 1/4 cup sugar
- 1/2 tsp. vanilla
- 4 cups assorted fresh fruit
- 1/4 cup apricot preserves strained to remove lumps
- 1 Tbsp. water
Instructions
- Pre-heat oven to 375°F.
- Arrange the cookie dough in single layer on an ungreased pizza pan. Press to cover bottom of pan. Bake 14 min or until it starts to lightly brown. Cool completely.
- Beat cream cheese, sugar and vanilla with mixer until blended- spread onto crust, leaving edges bare.
- Top with your choice of raspberries, strawberries, mandarin oranges, kiwi, ect
- Mix preserves and water; brush onto fruit.
- Refrigerate 2 hours.
