The kids have been back to school for about three weeks now and I thought we’d fall into a good after school routine but our afternoons are anything but routine right now. Between soccer practice, soccer games, and now hockey practice for two kids on two different teams, we are on the go at least four afternoons during the school week. A couple of nights a week we don’t get home till 7 pm and with their bedtime at 8-8:30 pm so I need family meals that are ready in 3o minutes or less.
Tuesdays in our house is hockey night as well as “Taco Tuesday”. Whoever came up with that idea was genius and makes dinner time for this busy mom on Tuesday nights easy. If it’s a Tuesday I don’t need to think about what to make for dinner, everyone already knows we’re having tacos. The kids love tacos which makes this easy dinnertime option even better – especially with Taco Boats, who knew flour tortillas that look like a boat are that much better than simple circular tortillas.
I like to switch it up each week between ground beef, chicken, steak, and fish, that way we don’t get tired of the same meal week after week.
Beer Battered Fish Tacos
These Beer Battered Fish Tacos take about 25 minutes to bake, and while they’re in the oven I can prep all of the toppings including our favorite creamy avocado sauce. By the time the kids get cleaned up after their sports practice, dinner is ready. Little prep work and dinner served in under 30 minutes? It’s a win.

Gorton’s beer battered fish fillets cooking instructions:
Bake the beer battered fish according to the directions. In the oven at 425 degrees for 23-25 minutes, flipping once. For a faster cooking time, microwave on high for 60 seconds, then broil for 7-9 minutes for 2 fillets or 9-11 minutes for 4 fillets, flipping over once.
While the fish is baking, cut the cabbage into thin slices, chop up the cilantro, quarter the limes and peel the avocado.
Make the creamy avocado sauce: Using a food processor or blender, combine the Greek Yogurt, avocado, lime juice from one full lime, and cilantro. Blend until smooth.
Warm the tortillas in the oven or microwave.
Once the fish fillets are brown & crispy, assemble each taco. Place the fish fillet inside the soft taco and top with the cabbage and the creamy avocado sauce. Garnish with addition cilantro and serve with a lime wedge.
