These healthy apple nachos are an easy after school snack for the kids, and will help satisfy any sweet tooth. Sliced apples piled high with greek yogurt, fresh fruit, almonds, coconut, mini chocolate chips.
With the kids out of school for the summer, our days have been busy with BBQs, beach trips, and spending time with friends outside, riding bikes, and playing with sidewalk chalk. We often have a few extra kids at our house on a daily basis throughout the summer so I’m always on the lookout for ‘better for you’ snack options.
Apple Nachos with Yogurt – Easy After School Snack
Yogurt varieties can be used other than just for breakfast in the morning, they can be used as a snack for camp, as an after dinner snack, or packed into a cooler for a day at the beach or a road trip. We often mix them into smoothies to help cool down on a summer day, make them into popsicles, or use them as a topping for apple nachos.
Apple nachos are always a huge hit with the kids, and I can make a few servings for all of the kids in just a few minutes. We almost always have fresh apples in the house and a large container of yogurt, as well as a variety of the single serve flavors each week.
The apple nachos are easy to make and I use a variety of toppings that I already have in the house, usually coconut, sliced almonds, and mini chocolate chips, and this week we had some blueberries as well.
How to Make Apple Nachos:
- Apples -Any kind, I prefer Granny Smith
- Yoplait Yogurt – your favorite variety
- Toppings: sliced almonds, coconut, mini chocolate chips, blueberries, peanut butter, ect
Directions:
Start by slicing the apples – I use an apple peeler/slicer which cuts the apples nice and thin. It peels the skin, removes the core and cuts the apple into even slices at the same time. You can easily peel and slice the apples within seconds.
Next, spread your apple slices onto a plate and drizzle with your favorite yogurt. You can use a spoon or if you’re making a few servings you can also put the yogurt in a ziplock bag and cut the corner off.
Top with a variety of toppings including nuts, sliced fruit, dark chocolate chips, peanut butter, or coconut.
Serve immediately.
How to Core an Apple:
Buy an Apple Peeler/Slicer, you wont regret it! We use ours weekly. Core, slice, and core an apple in less and 15 seconds!
