Tomato Basil Pasta with Grilled Chicken is quick weeknight pasta dish using simple ingredients. Just toss everything in a casserole dish, and bake in the oven for 40 minutes.
This week I was on a roll with this whole meal planning thing. I have my good weeks and my bad weeks but things are so much less hectic when I plan ahead. It’s hard with the kids and their crazy soccer and hockey schedules since we have to be out of the house by 4:15 pm a couple nights a week, which means giving the kids a small serving of dinner at 3:45pm and the rest at 7pm. With all of the running around they can’t last until 7pm without dinner and I don’t want them to eat a bunch of snacks in between practice and games to feel full.
This week I turned to a couple of our favorite one dish meals, Tomato Basil Pasta with Grilled Chicken & Chicken Divine. Both require grilled chicken, so I made sure to grill enough chicken for both meals ahead of time, saving even more time during the busy after school rush. With all the ingredients already on hand, and the chicken pre-cooked I can just dump everything into one dish, and toss it into the oven to bake.
5 minutes to prep + 40 minutes to bake.
With the chicken pre-cooked this family meal only takes about 5 minutes of prep time to preheat the oven, chop up the tomatoes, open a box of pasta and measure the 5 other ingredients.
Tomato Basil Pasta with Grilled Chicken
What You’ll Need:
- 2 cups grilled chicken, cut into bite sized pieces
- 2 cups grape tomato, halved
- 3 cups uncooked penne pasta
- 3 1/2 cups low sodium chicken broth
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup fresh basil, chopped
- 1 tsps. minced garlic
- 1/2 tsp salt
- 13 x 9 baking dish

Directions:
Preheat oven to 450 degrees F. Spray a 9×13 baking dish with cooking spray.
Place the cooked chicken, tomatoes, pasta, chicken broth, 1 cup cheese, 1/4 cup basil, garlic, and salt into the baking dish and mix. Cover with foil and bake for 40 minutes
Remove foil and top with the rest of the cheese, bake uncovered for an additional 5-10 minutes or until cheese is melted.
Garnish with basil.
Serve this Tomato Basil Pasta with a side salad.
