Creamy Garlic Chicken made in the slow cooker is the perfect weeknight dinner! The chicken breast slow cooks all day in a creamy garlic Alfredo sauce with spinach and tomatoes. Our family loves it served over spaghetti, or served with a side of green beans. This easy dinner recipe is adult and kid approved!
Dinner time is a constant struggle in our house with the never ending sports practice and games. This past month they added another hockey practice a week onto my 9 year old’s schedule which means goodbye to quiet Monday nights. Monday’s are just another day of the week when I have to feed the kids and be out of the house by 5 pm.
Most days I spend juggling my time trying to work from home and entertain a toddler before the 3pm after school rush begins. With our busy weeknights, quick and easy dinner recipes make the nights go by a lot smoother. My favorite meals are crock pot meals, I can prep them in the morning or even a month beforehand and the crockpot does the rest of the work. The crock pot freezer meals, are even a bigger time saver but I don’t always have a lot to choose from in the freezer.
This Creamy Garlic Chicken Alfredo is a family favorite and is so easy to make. You can easily turn it into a freezer meal by placing all the ingredients, minus the spinach in a zip lock bag and freeze until ready to use.
If you have a favorite homemade alfredo sauce, you can make it with that. Or you can pick up your favorite Alfredo Sauce at the grocery store.
Creamy Garlic Chicken Recipe
Ingredients:
- 1 Tbsp olive oil
- 3-4 boneless chicken breasts
- salt and pepper
- 2 15 oz jars Alfredo Sauce
- 1 14.5 can diced tomatoes
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 cup mushrooms (optional)
- pasta (cooked according to directions on box)
How to make this Crockpot Creamy Garlic Chicken.
Heat the olive oil over medium-high heat in a skillet. Season chicken with salt and pepper and cook 3-5 minutes on each side, or until lightly browned on both sides.
Remove chicken from skillet and place in the crock pot. Top with Alfredo sauce, diced tomatoes, cheese, garlic powder and Italian seasoning. Mix.
Cook on low 3-4 hours.
Add in baby spinach & mushrooms, and cook additional 5 minutes.
Serve the chicken alfredo over your favorite pasta.
Make this Creamy Garlic Chicken a Crock Pot Freezer Meal:
*To make this chicken in creamy garlic sauce a freezer meal, place all ingredients except pasta, spinach and mushrooms into a gallon sized freezer bag. Seal closed and place in freezer. When ready to use thaw in fridge overnight and empty contents into a crock pot. In the last 5 minutes, add the spinach and mushrooms.
